I've been making muffins and cupcakes lately. I don't know what it is about them that I like so much, but I can't deny that the endless variety in cupcake/muffin liners that are available nowadays does appeal to my whimsical side. We have a huge gallon jar of cupcake liners in our kitchen that we collect. I don't know if I will ever be able to use them all.
This time I made apple-pumpkin muffins. The recipe is from here. I was just in one of those fall-baking sort of moods, ya know?
They turned out quite delicious. But I'm a sucker for anything with pumpkin or apples. Try them yourself :)
How is your weekend going? Mine has, so far, consisted of entertaining my seven and eight year old nieces. They are so much fun!

Banana Cupcakes with Chocolate Frosting

Guess what? I'm back and I have a re-vamped blog layout! You like, yes?
Guess what else? I also made these delISH banana cupcakes today. Oh so scrumptious.

I used the banana cupcake recipe from the Taste of Home website, but I wasn't digging the idea of lemon frosting on them. So I went with a classic chocolate frosting recipe from one of my cookbooks. I topped them off with some chocolate toffee bits.
I was feeling too lazy to frost them with a piping bag thanks to twisting my back yesterday and not being able to stand a whole lot today without considerable pain. So I innovated... I used one of those tiny ice cream scoops that are often used for cookie dough, then made a flattened area with the back of a spoon dipped in VERY hot water. Worked for me!
I'm off to rest my back before I turn into a crooked old lady. Have a fabulous Sunday evening!
